This delicious summer salad is full of flavor and vein supporting nutrition. Lots of fiber, vitamin C and healthy fats will keep your veins strong and inflammation free. A whole food diet with lots of fresh fruit and veggies is a key to preventing and improving many of the symptoms of varicose veins. We recommend organic produce whenever possible.

In addition to being beautiful and health-promoting, the salad is easy to put together in about 15 minutes and pairs well with any main course. You can even turn it into the main course by adding some grilled salmon or chicken. You won’t be disappointed with this colorful, refreshing delight!

citrus arugula salad

For the Salad:

  • 12 cups of baby arugula
  • 1-2 large fennel bulbs, thinly sliced
  • 6 baby cucumbers, thinly sliced
  • 1 large avocado, sliced
  • 1 large orange, peeled and cut into sections
  • 2 large blood oranges, peeled and cut into sections
  • 1 large ruby red grapefruit, peeled and cut into sections
  • ¼ cup pine nuts, toasted
  • ⅓ cup grated parmesan
  • 1 Tbsp. fresh chopped dill

For the Lemon Vinaigrette:

  • ¼ cup fresh lemon juice (2 to 3 lemons)
  • ¼ cup extra virgin olive oil
  • Salt and pepper to taste
  • 1 Tbsp. Dijon mustard
  • 1 Tbsp. honey or maple syrup
  • 1 Tbsp. fresh chopped dill


  1. Mix all the dressing ingredients in a bowl and whisk together.
  2. Layer the arugula in a large salad bowl, alternating with fennel.
  3. Sprinkle the cucumbers over the top along with half the pine nuts.
  4. Add a layer of parmesan.
  5. Add the citrus randomly over the salad.
  6. Fan out the avocado slices on top of the salad.
  7. Add the remaining pine nuts, parmesan, and the fresh dill on top.
  8. Pour the dressing evenly over the top and enjoy!
