Grilled chicken with cilantro lime dressing in pita
It’s Independence Day coming up and what better way to celebrate than with a good old barbeque. Barbeques are a fantastic way to prepare all our favorite foods in a super healthy way because most of the fat drips away. You can pretty much grill anything on a barbeque, but my favorite has always been chicken. Check out my zesty cilantro-lime marinated chicken recipe below and believe me–you won’t look back.
Super healthy, super moist, and super tasty. Serve with crispy salad inside a warm pita.
Ingredients (serves 2)
2 chicken breasts
A handful of cilantro (chopped)
Juice and zest of 1 lime
1 tablespoon Olive oil
1/4 teaspoon low sodium salt
2 Pita Bread
Directions
Marinate the chicken with all the ingredients for at least 2 hours (preferably overnight), then place on the grill/BBQ over a low to medium heat for approximately 20 mins, turning occasionally. To check the chicken is cooked insert a skewer and the juices should run clear.
Serve with salad inside a warm pita. For a super quick dressing mix 1/2 cup of low-fat Greek yogurt with 1/4 cup cilantro and juice of 1/2 lime, mix well.
