We all know that avoiding salty processed foods and cooking from scratch using fresh fruit and vegetables is good for our overall health. But did you know that certain foods can actually prevent varicose veins from forming or, if you are already a sufferer, can reduce symptoms?
These include foods rich in potassium, vitamins, and antioxidants.
Enter our delicious ginger chicken slaw recipe! Not only does it include three of the best antioxidizing ingredients–ginger, garlic, and walnuts–it is also super easy to make and packs a serious flavor punch. Expect about 30 minutes of prep and 25 minutes of cooking.
Ingredients (serves 4)
- 2 small chicken breasts (skin on)
- 4 cups shredded savoy cabbage
- 2 cups shredded carrot
- ½ cup thinly sliced red onion
- 1 tbsp grated ginger
- 1 tbsp grated garlic
- 2 tbsp olive oil
- 3 tbsp lime juice and zest of 1 lime
- ½ tsp sugar
- kosher salt and pepper to taste
- Cilantro leaves and chopped toasted walnuts for garnish
Preheat oven to 425 degrees, and in a small pan cook ginger and garlic in olive oil for 1 min. Whisk in lime juice, zest, sugar, salt, and pepper.
Reserving 2/3rds of the dressing, brush the remainder over the chicken breasts and roast for around 25 mins until the skin is crispy and the internal temperature reads 165 degrees.
Shred the chicken into bite-sized pieces and toss with cabbage, carrots, and remaining dressing.
Top with cilantro leaves and toasted walnuts.
